The Last Open Week can be changed from the Planning Periods section via General Settings. 

You can plan in the future by extending the Last Open Week. 

Recommendations are to set the Last Open Week to couple of years in the future.

Clicking on the current Last Open Week date will bring up a calendar from which you can select the new date.
